Gluten-Free Chocolate Marshmallow Cookies

“What do you like doing best in the world, Pooh?"
"Well," said Pooh, "what I like best-"
and then he had to stop and think.
Because although Eating Honey was a very good thing to do,
there was a moment just before you began to eat it
which was better than when you were,
but he didn't know what it was called.

~ A. A. Milne, The House at Pooh Corner

Between freezing our garden-fresh strawberries, filling orders in the shop, and planning out the details for an exciting watercolor project, quite a bit of baking has been going on in the kitchen lately.

Our sister, Meg, experimented with a couple of new-to-us recipes and combined
these homemade marshmallows with these chocolate sugar cookies to create some absolutely scrumptious, gluten-free marshmallow cookies.

She melted about 1 cup of chocolate chips with a couple tablespoons of butter and drizzled the chocolaty glaze over the tops.

Next time, we'll try them as cookie bars in a 9x13 pan, however . . .

The picture-perfect presentation of these cookies, almost made the moment just before eating them better than when we were. 😋
